Zucchini Pizza Boats

Ingredients
- 200g VEGCHEESE Fresh Mozz 
- 6 medium zucchini 
- 1 cup pizza sauce (we used Rao’s pizza sauce) 
- Diced mushrooms (to taste) 
- Diced red onions (to taste) 
Directions
- Preheat oven to 350°. Lightly coat baking pan with your choice of oil. 
- Half each zucchini lengthwise and scrape the center with a small spoon. (We added the center flesh and pulp to our smoothie!) 
- Add the pizza sauce to each halved zucchini shell. 
- Top with sliced VEGCHEESE Fresh Mozz along with your favourite toppings. 
- Bake for about 20 minutes or until zucchini is tender and cheese is bubbling. 
- Enjoy!
