Italian Black Truffle and Fresh Mozz Arancini

When life gives you a day old risotto...make some arancini!
Ingredients
Fresh Mozz or Curds
Frying oil of choice
Directions
Place risotto right out of the fridge in your hand and flatten into your cupped hand
Place a piece of VEGCHEESE Curd or some Fresh Mozz in the center of the cupped rice
Close the rice around the filling and shape into a ball
Roll the shaped arancini in flour
Roll in dairy-free milk (we used organic soy milk)
Finally roll them in breadcrumbs
Deep fry in nonstick pan
